Rita M. Singer, a registered dietitian and licensed dietitian/nutritionist, is the founder of RED Dietitians, LLC. She earned her bachelors degree in dietetics at Virginia Tech University where she also continued her Dietetic Internship in the rural communities of Southwest Virginia. Rita’s interest in wellness first began when she was given the opportunity to intern at the Cleveland Clinic in Ohio, where she worked in the Cardiac Prevention Unit. These experiences helped Rita understand the prevalence of diabetes, obesity and the general lack of awareness about proper nutrition and wellness among many individuals. Rita helps individuals focus on a healthy lifestyle by educating and teaching nutrition, not dieting, for long-term weight management and disease prevention. She emphasizes the importance of whole food nutrition by including foods your body recognizes as real such as whole fruits, whole vegetables, and whole grains.

She also recognizes that wellness is multi-dimensional and is influenced by a number of factors, and achieving a state of health and wellness is related to balance in one’s life. Nutrition is only one lifestyle component that can help create balance in our lives. Physical activity and nutrition compliment each other and can help create an optimal state of well-being. Food is fuel for our bodies and our minds, and therefore can influence all other dimensions. We can influence the state of our physical and mental/emotional health by eating well, exercising and managing stress.

Rita has been given the opportunity to share this knowledge with Pittsburgh and surrounding areas as she spends a large quantity of her time educating small and large corporations on wellness and nutrition. Rita’s experiences in the workplace have led her to make appearances on WQED’s “On Q” series by offering advice about nutrition during the holidays and the importance of worksite wellness. With her strong passion for food, Rita also brings guidance to the kitchen table by providing original, healthy, kitchen-tested recipes that taste great, which lead to the opportunity of filming several cooking demos for a web-based wellness company.

Rita strongly believes in the promotion and integration of health, fitness and a balanced lifestyle. She considers herself extremely fortunate to have chosen a field of study about which she is passionate, and a career in which she can translate her passion into improving the lives of others. Walnut Encrusted Salmon

4 4-oz salmon fillets
¼ cup walnuts
1 Tablespoon apple butter
1 Tablespoon Dijon mustard
¼ tsp coarse black pepper
1 Tablespoon fresh thyme

Preheat oven to 450°F. Place walnuts on baking sheet and toast for 5 minutes until lightly browned. Remove immediately and place in food processer to finely chop walnuts. Combine apple butter, mustard, pepper and thyme in small bowl. Place salmon filets on baking dish and brush with apple butter mixture. Top with toasted walnuts and bake 14-15 minutes or until salmon flakes.
